We are fully committed to our own version of Chardonnay. Estate grown, all made in a mixture of new and one year old oak (Seguin Moreau & D. Laurent) and wine globe.
One year on lees has built the palate, natural fermentations have added complexity and not fiddling around with fining and filtration (none of either) have left you with a rich, complex, super concentrated wine.

Processing: Destemmed and pressed to a mixture of oak and wine globe.
All natural fermentations, warm ferments (18-22C) then topped and mature on lees, no stirring.

A near perfect year, early rain, dry, warm but to hot. A very early season.

Something interesting: We've been trialling wine globes for 4 years. Seeing what they add to wine as opposed to oak, concrete, ceramics. Mainly you get this amazing clarity of variety. Like everything is amped up. If you see green apples, its like you are peeling apples. So we tend to use them as we have here, about 25% of the blend is enough to super charge the aromatics and balance the new oak components we also throw at it
Drink with: I think a perfectly prepared and delivered roast chicken or one that's been brasied in a creamy veloute. Chicken and Chardonnay, it's a thing

Ravensworth 2025 Estate Chardonnay
This is from the home grown, organic estate, and picked from a mere less-than-10–or-so-metres from winery for its wild ferment and life in quiet contemplation before bottling.
Love the lead of oatmeal, cornflakes, sour dough, vanilla wafer that come with this wine. Sea spray too, green apple, a crunch of just-ripe nectarine. It swishes around the palate with all that savouriness, a considered, loose knit feel, softness then a pleasing bite of freshnes. Such distinct pleasure here. And it’s own thing. Love it.
