Second time we've made a small batch of Shiraz (Syrah) without bunches or viognier. One for the purist.

Gently fermented as whole-berries and macerated for 6 weeks then pressed to 100% new oak (Taransaud TBSPN puncheon) and matured for two years.

Processing: Processed to whole berries with no bunches. Gentle daily plunging daily. Left on-skins for 8 weeks. Pressed to one new Taransaud 500l Puncheon. Matured for two years thus.

Another cool year, very wet early that kept us on our toes in the vineyard. Was a year for patience, faith and gumboots.

Cellaring: 10 years plus
Something interesting: Leaving the viognier and whole-bunches out of the fermentation allows for a longer maceration. 100% new oak is possible due to the type of barrel not being to oaky.
Drink with: Lamb heavily flavoured with middle-eastern spices and herbs.

"The 2023 Syrah leads with a bouquet steeped in rose petals, rose oil, blood orange, myrrh, plum and mulberry. It has notes of chinotto and mustard seed, licorice and blueberry. This is a very pretty cool-climate Syrah. It fermented with whole berries and matured in one new Taransaud puncheon for two years. 13.5% alcohol, sealed under screw cap."
